What's Your Go-To Summer Meal?

It's tough to come up with meals that are kid-friendly, nutritious and don't require turning on an oven.

Moms Talk is a weekly feature on all Lehigh Valley Patches in which local parents, caregivers and other members of the community are invited to share opinions and advice on parenting topics.

This week’s Moms Talk question comes to us from Moms Council member Beth Sharpless and relates to summer cooking.

The recent bout of extreme heat has Beth already pretty sick of hamburgers and hot dogs on the grill. And, she’s not a particularly huge fan of feeding her family hot dogs, since they don’t exactly fall into the category of health food. Beth writes: “I was thinking about it and (especially with the temps being in the 90s) I am curious about what summer-time recipes do folks have to share? I can grill hamburgers only so much. We are all sick of them already (and it's only the first official day of summer). I try to limit our intake of hot dogs, given their lack of nutrition. That being said, again, our menu tonight is none other then hot dogs and hamburgers (for the 10th time this month)."

So here’s what Beth wants to know:

Are there any quick, nutritious, recipes that don't require turning on an oven that people have out there to share?

Our Moms Council members include: 

  • Lisa Amey of Upper Milford Township is a stay-at-home mom to an 8-year-old boy and a 5-year-old girl. A past president of the MOMS Club of Emmaus and longtime member of MOPs (Mothers of Preschoolers), Lisa is an Independent Consultant for Arbonne International. 
  • Lisa Drew of Emmaus is a certified nutritionist and personal trainer, wellness and fitness coach with more than 17 years of experience. She is the mother of a 13-year-old girl and a 9-year-old boy.
  • Jennifer Elston of Emmaus has almost two decades of professional experience in child development and counseling. She is currently a stay-at-home mom to two beautiful girls. Together with her husband, Chris, she owns Christopher Elston Photography.
  • Jeanne Lombardo of Nazareth is the mother of a 10-year-old boy and a 5-year-old girl. She’s new to the Lehigh Valley, having moved to Nazareth from Bergen County, NJ in January.
  • Lisa Merk of Lower Macungie is a stay-at-home mother of four boys – a 12-year-old and 6-year-old triplets. Lisa is a past president of the MOMS Club of Lower Macungie East. In her “spare” time, Lisa teaches piano to school-age children.
  • Zoila Bonilla Paul of Bethlehem is a stay-at-home mom to two girls – a 5-year-old and a 14-month-old. Zoila is a member of her local “moms’ club” and says she is “well-versed in the fun that children can bring.”
  • Beth Sharpless of Emmaus works part time in a local emergency department as a nurse and part time from home as a customer support specialist. She has two children -- a boy who is almost 2 and a 5-year-old girl. She says they love spending time outdoors and dancing.

We eat alot of soup and salads in the summer. One of my kids favorite is chicken tortilla soup. Put the chips in the bowl, ladel the soup over them and spinkle with cheese. Always a hit, plus the soup is made in the crock-pot, love using the crock pot in the summer, don't have to turn on the oven!!

@Lisa, I am a big crock pot fan too. In the summer we also fall back on a Cyprus meal (you think it's hot here?!?) which basically consists of cracking open a watermelon, chunking up a good block of cheese and cutting up a nice loaf of bread. It's easy, nutritious and no-cook! Little clean-up too, which is another bonus in my book.

I like the idea of salad and sandwiches. It's easy and kid friendly. Also, we often do what we call light dinner-which is yogurt, fruits, veggies, and nuts. Our kids love light dinners the most.

You can basically cook anything on the grill-- chicken, steak/london broil, boneless pork chops, sausage, etc. You can slice any of it thin and get whole wheat rolls and make sandwiches out of any of those meats. You can also do veggie kabobs, corn on the cob or diced potatoes on the grill. I often slice raw vegetables as a side dish. French toast and fruit is also another quick stovetop meal.

With all our cucumbers coming in at once and we are not a big "pickle" family I made some cucumber soup this past Saturday. That's right, cucumber soup. Nice and cold - simple to make & great when it's HOT & HUMID.
3-4 medium cucumers, wash, peel & remove seeds - cut into chunks Put in a blender & add some chicken broth (I used about 4 cups) puree till nice & smooth - Transfer to a large bowl then add the rest according to your taste : cider vinegar (3 tablespoons or so) salt & some dill whisk in enough sour cream to make it thick & creamy & taste like heaven in a bowl. Chill about 3 hours & you're done. Everyone loves it. I only brought about 2 cups of it today for lunch - not enough! Tomorrow I'm bringing the bigger bowl.

I am concerned. Emmaus is a part of your constituency and to the best of my knowledge you have notRead More had a Town Hall Meeting or any public meeting in this area. Why? Safety is as important in Lehigh County as in other counties and programs such as this should be made available to everyone.
