Five Easy-to-Make Fruit Salads

Make any of these salads from allrecipes.com in 15 minutes or less for a tasty summer treat.

Pistachio Fruit Salad

1 (20 ounce) can of crushed unsweetened pineapple, drained (but keep the juice)
1 (1 ounce) package of instant sugar-free pistachio pudding mix
1 (15.25 ounce) can of unsweetened fruit cocktail, drained
1 (11 ounce) can of mandarin oranges in light syrup, drained
1 (12 ounce) tub of Cool Whip, thawed
1 cup of mini marshmallows

Whisk pineapple juice and pudding mix together for 2 minutes. Stir in fruit, then fold in Cool Whip and marshmallows. Cover and chill one hour before serving.

Banana Split Salad

1 (14 ounce) can of sweetened, condensed milk
1 (12 ounce) tub of Cool Whip, thawed
1 (21 ounce) can of cherry pie filling
3 firm bananas, cut into chunks
1 (8 ounce) can of crushed pineapple, drained
½ cup of chopped nuts

Combine the milk and whipped topping until blended. Stir in fruit and nuts.  Cover and chill one hour before serving. (Drizzle with chocolate to serve it as a dessert).

Easy Fruit Salad

1 pint of strawberries, sliced
3 kiwis, peeled and sliced
3 bananas, sliced
1 pound of seedless grapes, halved
1 (21 ounce) can of peach pie filling

Combine all ingredients. Cover and chill one hour before serving.

Raspberry Melon Salad

2 2/3 cups of unsweetened raspberries
3 tablespoons of honey
1 teaspoon of lemon juice
1/8 teaspoon of ground ginger
½ large cantaloupe, cut into chunks
½ medium honeydew melon, cut into chunks

Blend raspberries until pureed. Add honey, lemon juice and ginger and blend.  Strain and discard seeds. Add the cantaloupe and honeydew; toss to coat. Cover and chill one hour before serving.

Layered Fruit Salad

2 cups of sliced fresh peaches
2 cups of fresh blueberries
2 cups of sliced strawberries
2 cups of green grapes, halved
1 (8 ounce) package of cream cheese
½ cup of confectioner’s sugar
1 (8 ounce) container of Cool Whip, thawed
¼ cup of chopped pecans

Beat together the cream cheese and confectioner’s sugar until smooth. Fold in Cool Whip. In a glass bowl, layer the fruit in the order listed. Spoon mixture over the fruit, then cover and chill one hour. Sprinkle with pecans before serving.
