Emmaus Mayor Likes his Cookies Chock Full of Chips

Emmaus Mayor Winfred Iobst likes lots of chocolate chips in his chocolate chip cookies.

According to historians, cookies evolved from test cakes used to check oven temperature. Small amounts of cake batter were dropped onto pans in order to test the temperature of the oven before cakes were baked. Cookies date back to 7th century Persia, then spreading throughout Europe with conquests and travelers.

But what are the favorite cookies in Emmaus Patch?

Winfred Iobst said his favorite Christmas cookie is chocolate chip, but it needs lots of chocolate chips. When he delivered milk years ago, he said, he often received gifts of his favorite cookie from his customers.

Ruth Wakefield, quite by accident, invented the chocolate chip cookie. She and her husband, Graves Wakefield bought a tourist lodge named the Toll House Inn.

One day, while baking cookies, Ruth discovered she was missing one ingredient -- baker's chocolate. She substituted a cut-up semi-sweet chocolate bar. However, unlike the baker's chocolate, the chopped up chocolate bar did not melt completely. The small pieces only softened.

The chocolate bar was a gift from Andrew Nestle of the Nestle Chocolate Company. As the Toll House chocolate chip cookie recipe popularized and sales of Nestle's semi-sweet chocolate bar increased, Andrew Nestle and Ruth Wakefield struck a deal. Nestle agreed to print her recipe on its packaging and Ruth Wakefield would have a lifetime supply of Nestle chocolate.

The official state cookie of both Massachusetts and Pennsylvania is the chocolate chip cookie.

Recipes:

Original Toll House Cookies

By Nestle Toll House

2 1/4 cups all-purpose flour           1 teaspoon vanilla extract

1 teaspoon baking soda                 2 large eggs

1 teaspoon salt                                2 cups (12-oz. pkg.) Nestle Toll House Semi-Sweet

1 cup (2 sticks) butter, softened      Chocolate Morsels

3/4 cup granulated sugar                1 cup chopped nuts

3/4 cup packed brown sugar

Preheat oven to 375° F.
Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Chocolate Chocolate Chip Cookies

From allrecipes.com

1 1/2 cups all-purpose flour             1 cup white sugar

1 1/2 teaspoons baking powder        1 1/2 teaspoons vanilla extract

1/4 teaspoon salt                               2 eggs

2 cups semisweet chocolate chips     1/2 cup confectioners' sugar

6 tablespoons butter, softened

Combine flour, baking powder and salt. Set aside. Melt 1 cup of chocolate chips over low heat. Cream butter and sugar. Add melted chocolate chips and vanilla; beat in eggs; add flour mixture and remaining chocolate chips. Wrap in plastic and freeze until firm (about 20 minutes). Make small balls (1 inch); roll in confectioners' sugar. Place on ungreased cookie sheet and bake for 10-12 minutes at 350 degrees F (175 degrees C). Cool on wire rack.
